...anything that would make it easier to start using EC2 to host a Rails application.

Check out all these links, each could teach you something different. And also Elastic Beanstalk allows Ruby on Rails on it as a runtime.

 

I would suggest you use the first link using Elastic Beanstalk and Ruby on Rails runtime to go with it.
