How to transform IIS logs using Log Parser (or other) within Power Query?

How can we trasform IIS log files by using Log Parser with the Power Query?

We can load IIS log file to load it as a single text column and edit to generate something like this:

= Csv.Document(File.Contents("C:\inetpub\logs\LogFiles\W3SVC1\u_ex160523.log"),[Encoding=1252, QuoteStyle=QuoteStyle.None])
