I have an EC2 instance with Apache with HTTP/2 as my target, So is it possible to have ALB connected to the target via HTTP/2 and avoid having ALB<--> EC2 connections be via HTPP/1.1?

No, That's not possible, ALB always converts the request to HTTP/1.1 and it can't be configurable.
