Grouping of multiple members/records in to different groups which will finally create higher category of dimension. By using grouping one can be able to compare the entries within a Dimension against remaining entries of that dimension. You can group the values only for Dimensions (String/Date time/Geographical data types) not for Measures.

For example: In the default data set of Tableau (Superstore sales), if you want to analyze the Accessories, Appliances, Art, Binders and bookcase subcategories sales against rest of the subcategories. So for that first you need to drag and drop the Subcategory and Sales in to the Tabular visualization as shown below:

After that you can select those subcategories with CTRL, then you will see the group option, so select that option.

It will create a group of all the 5 different categories, but the name of that is not in proper format so for that you need to right click on group and click on edit aliases and rename the group

After renaming sort the data in descending order and swap the rows and column. Convert the tabular visualization in to the bar chart.

You can check tableau training for more details on Groups, sets, Bins, Parameters in Tableau.
