If I want public/private subnets in every Availability zone for Multi-AZ redundancy, So Should I have a NAT gateway in every AZ?

Yes, you would have One NAT gateway per AZ.

One NAT gateway in a single AZ has redundancy within that AZ only, so if any zonal issues then Instances in other AZ would have no route to the internet.
