What happens when I reboot an Ec2 instance?

When I reboot an instance would I still get the initial state of the hard disk again?

No, the hard disk would not be affected. But you won't return to the original image state still, the contents of the disk are the same as before the reboot. So reboot keeps hard disks intact.
